Sin Chew Satay Bee Hoon 星洲沙爹米粉

A word of caution for this next dish as it is served with a ‘long queue’ starter. I was greeted by this winding snake line when I visited Sin Chew Satay Bee Hoon at Bukit Timah Food Centre on a Sunday evening. I counted 15 customers ahead of me and the approximate waiting time was 40 minutes.

Satay Bee Hoon is of Teochew origins however no one exactly knows who was the pioneering chef. Regardless, I am happy as hell this dish came into my life. The Satay Bee Hoon (S$4/5/6) served at Sin Chew mainly consists of rice vermicelli fine noodle accompanied by slices of cuttlefish, pork, shucked cockles and prawns. The vegetables include kang kong, bean sprouts and tau pok. To make the vermicelli more manageable, it is being cut into smaller chunks. Finally, satay sauce is drenched over the entire dish before serving.

At first glance, the dish may seem unimpressive due to the lacklustre appearance of the brown satay sauce. Ironically, it is this exact sauce that will tantalise your taste buds and bowl you over. I cannot emphasize enough the importance of thoroughly mixing the sauce with all the ingredients. It will be MESSY but definitely essential to fully experience this wonderful dish.

The satay sauce was rich in flavour and not too spicy. Ground peanuts provided a little nutty texture to the sauce which had a slightly thick consistency. This consistency allowed the sauce to coat the ingredients however it does dry rather quickly so remember to chow down soon.
With so many ingredients, each bite had a different texture to it. The vermicelli was soft and absorbs the satay sauce really well. The taste of the cuttlefish was not heavy but does add a chewy texture to the dish. The pork slices were a little dry but the sauce makes up for it. The cockles added delightful bursts of flavour when you crunch into them. The tau pok absorbed all the savouriness of the dish and give it to you all in one bite.

In short, the satay sauce was the one that binds all the ingredients together, making this dish simply awesome! My words do not do justice, you really have to try it for yourself. Kindly take note of the opening hours as they do not open every day.
